How to make apple, maple and pecan fool recipe
Serves 4
Total cooking time 10 minutes
Ingredients:
200 g (7 oz) good-quality apple sauce
1 Granny Smith apple, peeled and grated or finely chopped
200 ml (7 fl oz) double cream
250 ml (8 fl oz) fresh custard
3 tablespoons maple syrup
25 g (1 oz) pecans, toasted and chopped
pecan biscuits, to serve
Method:
Put the apple sauce and chopped apple in a small saucepan, cook for 5 minutes to soften, then place in metal bowl in the freezer for a few minutes to cool.
Whip the cream until soft peaks form, then stir in the custard. Swirl through the apple purée and maple syrup, then spoon into serving dishes. Top with toasted pecans and serve with pecan biscuits.
For apple & pecan brioches, core and thinly slice 2 Braeburn apples, arrange on a baking sheet and brush over a little melted butter. Cook under a preheated medium grill for 3 minutes on each side until lightly golden. Mix 150 ml (¼ pint) each of milk and cream with 1 egg and 1 teaspoon vanilla extract.
Dip 8 slices of brioche in the mixture until well coated. Heat a little butter in a nonstick frying pan and cook the brioche in batches for 2–3 minutes on each side until golden.
Arrange the apple slices on top, add spoonfuls of crème fraîche and scatter over chopped pecans. Drizzle with a little maple syrup to serve. Total cooking time 20 minutes.
