1 Preheat the oven to 300°F (150°C). Heat 1 tablespoon of the oil in a large flameproof casserole over medium heat. Add the chicken pieces, and cook for about 8 minutes, turning, until golden. Remove the chicken pieces from the pan, and set aside.
2 Reduce the heat to low, and add the remaining oil and onions to the casserole. Cook gently for 5 minutes until soft, then add the pancetta. Increase the heat a little, and cook for another 5 minutes until the pancetta is browned. Stir in the garlic, then pour in the wine. Increase the heat to high, and let bubble for few minutes until the alcohol has evaporated.
3 Add the stock, and bring to a boil once again. Season with salt and pepper, and stir in the peas, parsley, and mint. Return the chicken pieces to the casserole, cover, and transfer to the oven to cook for 1½ hours. Check the level of liquid occasionally while cooking–it needs to be fairly dry, but if it does require more liquid to prevent sticking, just add a little hot water. Serve hot with fresh crusty bread or sautéed potatoes.

3 Lightly toast the pita breads, and cut open to form a pocket.
4 Stuff each pita pocket with a handful of lettuce, onion, and red cabbage, then the chicken pieces. Dress with lemon juice, chilli sauce and garlic mayonnaise to taste. Garnish with tomato, cucumber, and a jalapeño. Serve immediately.

3 In a large frying pan, heat the oil over high heat. Add the chicken pieces, two at a time, and cook for 6–8 minutes, turning once, until golden and cooked through. Remove from the pan, and set aside to keep warm.
4 Now reduce the heat slightly and add the spinach to the same pan with a sprinkling of water. Cook, stirring, for a few minutes until just wilted. Sprinkle with some of the lemon juice, and serve on warm plates, along with the chicken. Squeeze the remaining lemon juice and a few drops of chili oil over the top, and serve immediately.

2 Prepare the rice noodles as the package directs; drain and keep warm.
3 To make the dipping sauce, combine the garlic, chiles, vinegar, and sugar in a small saucepan. Add 2 tablespoons water, and heat gently until the sugar has dissolved do not boil. Allow to cool, then stir in the lemon juice.
4 Thread the chicken lengthwise onto 8 medium skewers, allowing two for each serving. Heat a ridged cast-iron grill pan or frying pan until hot. 1 To poach the chicken, bring the stock and soy sauce to a boil in a large pan. Add the chicken, reduce the heat, and simmer for 10–15 minutes until the chicken is cooked. Remove with a slotted spoon, and set aside. Slice or shred when cool enough to handle.
2 Stir the tom yum paste into the stock until it dissolves, then add the scallions, mushrooms, and tomatoes, and simmer for 5–8 minutes. Return the chicken to the pan.
3 If the liquid has reduced too much during cooking, add more stock. Add a splash of fish sauce, taste, and season accordingly with salt and pepper or add more fish sauce. Serve hot.
