MAKES 8 QUICHES
Ingredients:
8 ultrathin round slices ham
8 eggs
4 ounces Cheddar cheese, grated (1 cup)
2 tablespoons chopped fresh parsley
Method:
Preheat the oven to 350°F. Line 8 muffin pan cups or custard cups with the ham. Whisk the eggs well and season with sea salt and cracked pepper.
Divide the eggs evenly among the cups. Sprinkle each with cheese and parsley. Bake for 20 minutes, or until golden and set.
