This recipe has two magnificent herbs, mint and cilantro, that are particularly fond of mingling with sweet watermelon and tangy lime. The cooling properties of both the melon and the mint make this a nourishing summertime tonic, and lime juice helps to carry away toxins that may have accumulated from one too many barbecues. Add in sugary dates as well as creamy coconut milk and you’ve got a fiesta of flavor!
Yield: Approximately one 20-ounce (570 ml) smoothie
Ingredients:
1 cup (150 g) fresh seedless watermelon flesh, chopped
3 pitted medjool dates
1 cup (235 ml) coconut milk
1 lime, juiced
1 tablespoon (15 ml) AFA
8 mint leaves
1 tablespoon (1 g) cilantro leaves
Method:
In a blender, combine all the ingredients.
Blend on high for 20 seconds. Enjoy immediately and sip slowly.
