How to make Spinach Parmesan Couscous Recipe - is such a great side dish it literally takes just minutes to cook and is a great substitute for rice. I cook onions and garlic with fresh spinach and then toss in cooked couscous and fresh Parmesan cheese. Have the kids grab a chair and watch how fast the fresh spinach wilts as you add it to the hot skillet. It’s the perfect side with almost any entrĂ©e.
Ingredients:
1 10-ounce box plain couscous
1⁄4 cup extra-virgin olive oil, divided
5 cups chopped fresh spinach leaves
1⁄4 cup finely chopped white onion
1 tablespoon minced garlic
1⁄2 cup shredded Parmesan cheese
1⁄2 teaspoon kosher salt
1⁄4 teaspoon freshly ground black pepper
Method:
1. Prepare the couscous according to the package directions. Transfer to a large bowl, tossing to fluff.
2. Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium heat. Add the spinach and onion and cook, stirring, until the spinach is wilted, about 5 minutes. Add the garlic and cook, stirring, for 1 minute. Add the cooked couscous, Parmesan cheese, salt, pepper, and the remaining 2 tablespoons of oil and stir to combine. Serve warm.
