Ingredients:
5 large avocados, peeled, seeded, and diced
1⁄2 cup quartered and seeded cherry tomatoes
1⁄4 cup chopped fresh cilantro
3 tablespoons fresh lime juice
2 tablespoons finely chopped white onion
1⁄2 teaspoon kosher salt
1⁄4 teaspoon freshly ground black pepper
Method:
1. Add the avocado to a large bowl. With a fork, mash until just some chunks are still present. Add the tomatoes, cilantro, lime juice, onion, salt, and pepper and stir to combine. This is best if served within 2 hours.
