Ingredients
2 c. shredded potatoes (ready-made is fine)
1 small onion, diced
2 eggs
3 Tbsp. flour
½ tsp. baking powder
¼ c. oil
Salt and pepper to taste
Method:
Combine all ingredients in food processor until smooth.
Spoon into heated waffle iron and bake until golden brown.
