Ingredients:
4 hamburger buns
450 g of cooked prawns
3 limes
100 g of endive
35 g shallot
4 tbsp. to curved cilantro chopped
2 eggs

cream
40 g grated coconut
1 pinch pepper puree
Salt and pepper
Method:
Shell the prawns, then chop them coarsely with a knife. Put them in a bowl and add the eggs, lightly beaten 30g grated coconut, salt and pepper. Knead well and book 30 minutes in the fridge.
Mix the cream with the juice of 2 limes, chili, salt and pepper. Coarsely chop the endive with a knife and slice the shallot.
Preheat oven to 200 C (gas mark 6/7). Fashion 24 shrimp dumplings between your fingers and place them on the oven rack lined with parchment paper. Sprinkle the remaining grated coconut and bake at mid-height for 5-1 0 minutes.
