How to make War Cake Recipe - This "backwoods" country cake has been known by many names: Eggless, Milkless, Butterless Cake; Poor Man's Cake; Hill-Billy Cake; or Boiled Spice Cake.
Makes 2 loaf cakes
Ingredients:
2 cups dark raisins
2 cups sugar
3/4 cup lard or vegetable shortening
2 cups water
2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground allspice
3-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
Method:
Preheat oven to 350F (175C).
Grease and flour 2 (9" x 5") loaf pans. In a medium-sized saucepan, combine raisins, sugar, lard or shortening, water and spices. Bring to a boil, stirring; boil 5 minutes. Remove from heat. Cool to room temperature. Stir in flour, baking soda and baking powder.
Divide batter between prepared pans. Bake 30 to 35 minutes or until a wooden pick inserted in center comes out clean. Turn out of pans and cool on a rack.
