How to make 1839 Pork Cake Recipe - A fruited spice cake, it keeps fresh for months if wrapped and kept cool. The flavor, like that of a high-quality fruit cake, improves when aged.
Makes 2 loaf cakes
Ingredients:
1/2 pound salt pork, coarsely ground
1 cup boiling water
4 cups all-purpose flour
1 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon each ground cinnamon, cloves, allspice and nutmeg
1 cup raisins
2 eggs
1 cup sugar
1 cup light molasses
Method:
Preheat oven to 300F (150C).
Grease and flour 2 (9" x 5") loaf pans. Ask the butcher to grind the salt pork for you. Put pork into a large bowl and pour the water over. Let stand 15 minutes.
Mix flour, baking soda, salt, cinnamon, cloves, allspice and nutmeg into pork. Blend in raisins. In a small bowl, combine eggs, sugar and molasses. Mix into raisin mixture until blended.
Divide batter between prepared pans. Bake 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean. Turn out of pans and cool on a rack.
