Makes 20 slices
Ingredients:
300 g butter
225 g sugar
5 eggs
170 g buttermilk
330 g flour
1 ½ tbsp baking powder
1 sachet vanilla sugar
pinch of salt
grated zest of 1 untreated lemon
butter for the baking tin
For the topping:
75 g sugar
1 tsp cinnamon
150 g flaked almonds
75 g butter
Method:
Pre-heat the oven to 200 °C (Gas Mark 6). Beat the butter and sugar to a creamy consistency. Add the eggs singly and then stir in the buttermilk.
Mix the flour and baking powder and add to the mixture together with the vanilla sugar, salt and grated lemon zest. Turn the mixture onto a large greased baking tray and level the top.
For the topping, mix the sugar, cinnamon and almond flakes and sprinkle over the cake mixture. Distribute flakes of butter over the cake and bake until golden brown for approx. 20 minutes. If desired, serve dusted with icing sugar and garnished with nut brittle cream.
