How to make spicy pimiento cheese dip recipe - This versatile dip can be processed smooth as a dip for crackers or potato chips, or coarse for a sandwich filling.
SERVES 6
PREP TIME 10 mins, plus chilling
Ingredients:
2 1⁄4 cups grated sharp cheddar cheese
1⁄4 cup sour cream
1⁄4 cup good-quality mayonnaise
1⁄4 cup finely diced roasted red peppers (pimientos), from a can or jar
2 large scallions, trimmed and finely chopped
1 tsp smoked paprika
1 tsp cayenne pepper
salt and freshly ground black pepper, to taste
crackers or homemade baguette bruschetta, to serve
Method:
1 Put all the ingredients into a food processor and pulse until the mixture is well combined, but rough in texture.
2 Place the mixture in an airtight container and chill for at least 1 hour to allow the flavors to develop.
3 Serve with crackers or homemade baguette bruschetta.

This tasty dip makes a delicious alternative filling for a Grilled cheese sandwich, layered with crispy, grilled prosciutto or applewood smoked bacon.
