Serves 4
Ingredients:
2 garlic cloves, crushed
4 ripe tomatoes, chopped
½ red onion, finely chopped
1 red (bell) pepper, seeded and diced
1 red chilli, diced
a few sprigs of fresh coriander (cilantro), chopped
juice of 1 lime
Method:
1 Mix together all the ingredients in a bowl. Cover and then chill in the refrigerator until required.
