PREPARATION: 20 MINUTES, PLUS 3 HOURS CHILLING, COOKING: 5 MINUTES
Ingredients:
1 cup (250 g) strawberries, hulled and sliced thickly
2 teaspoons (10 ml) powdered gelatin
3/4 cup (165 g) sugar
2 teaspoons (10 ml) finely grated lemon zest
1/2 cup (125 ml) freshly squeezed lemon juice
1 tablespoon (15 ml) extra light olive oil
1 large egg
1 1/3 cups (340 ml) fat-free plain yogurt
Method:
1 Put 3 tablespoons (45 ml) cold water in a small bowl. Sprinkle gelatin evenly over the water; let soften for 5 minutes.
2 Put another 3 tablespoons (45 ml) water, the sugar, lemon zest, lemon juice, oil and egg in a saucepan and whisk together until well combined. Place the pan over a low heat and cook, whisking constantly, for about 5 minutes, or until the mixture is hot. Whisk in the softened gelatin and cook, whisking constantly, until the gelatin has dissolved.
3 Remove from the heat, transfer the lemon mixture to a bowl and cool to room temperature, whisking occasionally. Whisk in the yogurt.
4 Layer the strawberries and lemon mousse into eight dessert bowls and place in the fridge to chill for about 3 hours, or until set.
