Serves 4
Ingredients:
125g/4oz chorizo, skinned and diced
1 red onion, finely chopped
1 red (bell) pepper, seeded and diced
4 ripe tomatoes, finely chopped
2 garlic cloves, crushed
juice of 1 lime
Method:
1 Cook the chorizo for 2–3 minutes, stirring, until the oil starts to run. Drain off the oil and mix with the remaining ingredients.
