How to make orange and strawberry salad recipe
Serves 4
Total cooking time 10 minutes
Ingredients:
60 g (2¼ oz) caster sugar
100 ml (3½ fl oz) water
1 tablespoon thinly sliced basil leaves
150 g (5 oz) strawberries, hulled and halved
4 oranges
Method:
Put the sugar and measured water in a saucepan and bring to the boil. Simmer for 2–3 minutes, then let it cool briefly before adding the basil.
Place the strawberries in a bowl. Peel and segment 4 oranges over the bowl to catch the juice. Add the orange segments to the strawberries.
Pour in the sugar syrup and serve.
For caramelized oranges, peel 4 oranges, then slice them thinly. Place in a shallow serving dish and pour over 1 tablespoon orange liqueur. Place 115 g (3¾ oz) granulated sugar, 1 cinnamon stick and 150 ml (¼ pint) water in a saucepan.
Heat, stirring, until the sugar has dissolved. Continue to simmer until the sugar starts to caramelize and turns a rich caramel colour.
Pour the syrup over the oranges. Decorate with 25 g (1 oz) toasted pine nuts and 1 tablespoon chopped mint leaves. Total cooking time 20 minutes.
