How to make rösti with ham and eggs recipe
Serves 2
Preparation time 10 minutes, Cooking time 10–12 minutes
Ingredients:
500 g (1 lb) waxy potatoes, such as Desiree, peeled
25 g (1 oz) butter
2 eggs
2 slices of smoked ham
salt and pepper
To serve
tomato ketchup
Method:
Grate the potatoes using a box grater and place on a clean tea towel. Wrapping them in the towel, squeeze out all the excess moisture, transfer to a bowl and season to taste with salt and pepper.
Melt the butter in a large nonstick frying pan. Divide the potato mixture into quarters and form each into a 10 cm (4 inch) cake. Add to the pan and cook over a medium heat for 5–6 minutes on each side or until lightly golden and cooked through.
Meanwhile, poach or fry the eggs. Serve 2 röstis per person, topped with an egg, with a slice of smoked ham and some tomato ketchup, if liked.
For sweet potato rösti with egg & spinach, grate 250 g (8 oz) sweet potatoes and 250 g (8 oz) waxy potatoes as above and mix together.
Make and cook the röstis as above. Serve 2 röstis per person, topped with a poached egg and a small handful of baby spinach leaves.
