How to make Oyster Trio Recipe
SERVES 8 TO 10
3 dozen raw oysters, freshly shucked, on the half shell
BACON, BALSAMIC & LEMON DRESSING
2 slices bacon, cut into 1/4-inch squares
2 tablespoons balsamic vinegar
Finely shredded zest of 1/2 lemon
Method:
In a small saucepan over low to medium heat, cook the bacon, stirring occasionally, until crisp. Stir in the balsamic vinegar and lemon zest and season with salt and pepper. Allow to cool before spooning onto 12 of the oysters.
GINGER-WASABI MAYO
1 tablespoon freshly grated ginger
1/3 cup mayonnaise
1 teaspoon wasabi paste
1 tablespoon finely chopped pickled ginger
Method:
Stir together the grated ginger, mayonnaise, and wasabi until smooth. Spoon over 12 oysters and sprinkle with the pickled ginger.
OYSTERS MEXICANO
Finely shredded zest and juice of 1/2 lime
1/4 cup guacamole, or mashed avocado seasoned with salt and pepper
12 corn chips or tortilla chips
Method:
Drizzle the lime juice over 12 oysters. Spoon on the guacamole, sprinkle with a little zest, and stud with a chip to serve.
