Serves 4, Total cooking time 10 minutes
Ingredients:
½ ciabatta loaf, cubed
2 tablespoons olive oil
1 cos (romaine) lettuce, leaves separated
200 g (7 oz) ready-cooked chicken, chopped
75 g (3 oz) ready-cooked crispy bacon rashers, broken into pieces
6 tablespoons ready-made Caesar salad dressing
25 g (1 oz) Parmesan cheese shavings
Method:
Place the ciabatta cubes on a foil-lined grill pan and drizzle over the olive oil. Toast under a preheated medium grill for about 5 minutes, turning occasionally, until golden and crisp.
Meanwhile, roughly tear the lettuce leaves and place in a salad bowl with the chicken and most of the bacon pieces.
Add the toasted bread cubes and salad dressing and toss well to mix. Sprinkle over the reserved bacon pieces and the Parmesan shavings. Serve immediately.
For chicken Caesar with garlicky croutons:
Cut ½ ciabatta loaf into cubes. Mix 1 crushed garlic clove and 4 tablespoons olive oil and toss the cubes in the oil.
Spread on a baking sheet and bake in a preheated oven, 200°C (400°F), Gas Mark 6, for 10 minutes until crisp.
Add to a bowl of torn cos (romaine) lettuce leaves, chopped ready-cooked chicken and crispy bacon pieces tossed in 6 tablespoons ready-made Caesar salad dressing. Total cooking time 20 minutes.
