How to make Mint Chip Smoothie Recipe - One of my favorite treats as a child was mint chocolate chip ice cream. When I gave up dairy more than four years ago, I vowed not to give up enjoying those two compatible flavors. After a few rounds of testing, I landed on a healthful smoothie that captures the essence of this summertime treat. The flavor is so lip licking that you won’t notice the abundance of calcium and antioxidant-rich kale or the fibrous avocado I’ve snuck into this recipe.
Yield: approximately one 20-ounce (570 ml) smoothie
Ingredients:
4 large kale leaves, de-ribbed
1/2 medium avocado
10 to 12 fresh mint leaves
2 tablespoons (15 g) chocolate plant protein powder (such as pea or hemp)
1 tablespoon (6 g) cacao powder
1 1/2 cups (355 ml) unsweetened almond milk
2 tablespoons (13 g) yacon syrup
4 to 6 ice cubes
1 teaspoon cacao nibs
Method:
In a blender, combine the kale, avocado, mint, protein powder, cacao powder, almond milk, yacon syrup, and ice.
Blend on high for 20 seconds or until smooth.
Transfer to a serving glass or jar and sprinkle with the cacao nibs. Enjoy immediately and sip slowly.
