How to make pineapple mojito cocktail recipe

Ingredients:
glasses 2 highball glasses
equipment muddling stick, cocktail shaker, strainer
1 lime
12 mint leaves, plus extra to decorate
8 pineapple chunks, plus wedges to decorate
4 teaspoons brown sugar
4 measures golden rum
crushed ice
pineapple juice, to top up
Method:
Cut the lime into wedges and muddle with the mint, pineapple chunks and sugar in the bottom of a cocktail shaker. Add the rum and shake with crushed ice.
Pour into 2 highball glasses, top up with crushed ice and pineapple juice and stir. Decorate with a pineapple wedge and a mint sprig.
For a Pink Mojito, to serve 1, muddle 6 mint leaves, the juice of half a lime, 2 teaspoons of sugar syrup and 3 raspberries in a highball glass. Add a handful of crushed ice, then pour in 1½ measures of white rum and ½ measure of Chambord. Stir well, then top up with cranberry juice and decorate with mint sprigs.
