Saltado

How to make Saltado Recipe - Saltado is an extremely popular main course meal in Peru. It is made with beef or chicken and usually with a side of white rice.

Ingredients:
1 recipe Essential Fries, Drive-in Fries, or Oven Fries
1 cup white vinegar
2 teaspoons salt
1 teaspoon freshly ground black pepper
3 garlic cloves, pressed
4 chicken breasts
2 tablespoons olive oil
2 ripe tomatoes, sliced
1 yellow onion, sliced
1 aji or Peruvian hot pepper, cut into thin strips (a jalapeƱo or yellow pepper may be substituted)
Prepared white rice
Fresh cilantro

Method:
Combine the vinegar, salt, pepper, and garlic to create a marinade. Cut the chicken into thin strips and place in the marinade. Refrigerate for 24 hours for the best flavor.

Heat the olive oil in a skillet over medium-high heat. Stir-fry the chicken for about 5 minutes until cooked. Add the tomatoes, onion, and hot pepper, cooking for about 2 minutes more. Stir in hot prepared french fries and serve with a side of white rice. Garnish with cilantro.
