Serves 4

Ingredients:
1 butternut squash, peeled, halved lengthwise, seeds removed, and cut into wedges
2 red onions, peeled and cut into eighths
handful of fresh sage leaves, finely chopped
pinch of crushed hot red pepper flakes, or to taste (optional)
sea salt and freshly ground black pepper
1–2 tbsp olive oil

Method:
1 Preheat the oven to 400°F (200°C). Combine the squash, onions, sage, and pepper flakes in a large roasting pan, and season well with salt and pepper. Add the oil and combine all the ingredients well with your hands

2 Put in the oven to roast for 30–40 minutes or until the squash is tender inside and golden on the outside. Serve with roast chicken or pork, and a mixed green salad on the side.
