How to make Tomato, bean, and zucchini stew recipe - Ragoƻt de tomate, haricot et courgettes recette
Serves 4
Ingredients:
3 tbsp olive oil
1 large onion, finely chopped
2 zucchini, cut into bite-size chunks
3 garlic cloves, finely sliced
14oz (400g) can borlotti beans, drained and rinsed
3 fresh tomatoes, diced
1 tsp paprika
1 tsp dried oregano
sea salt and freshly ground black pepper
hot chilli oil, to serve (optional)
Method:
1 Heat the oil in a deep-sided frying pan, add the onion, and cook over medium heat for 3 minutes. Add the zucchini and cook for another 5 minutes, stirring frequently.
