Serves 4
Ingredients:
3 tbsp olive oil
1lb (450g) whole baby onions, peeled
3 garlic cloves, finely sliced
3 tbsp balsamic vinegar
sea salt and freshly ground black pepper
olive oil or hot chili oil, to serve
Method:
1 Preheat the oven to 350°F (180°C). Heat the oil in a deep-sided frying pan, then add the onions, and cook over low heat, stirring frequently,until browned, about 15 minutes.
2 Transfer the onions to a small baking dish, packing them in tightly. Sprinkle with the garlic, and spoon the balsamic vinegar over the top. Season well with salt and pepper, then bake, stirring every 5 minutes, until tender and glazed, about 20 minutes. Serve hot or cold with a good drizzle of olive oil or chili oil, and some crusty bread and cheese.
