Serves 4

Ingredients:
4 tbsp olive oil
6 garlic cloves, thinly sliced
1 tsp crushed hot red pepper flakes
1 tbsp dry sherry
8–9oz (250g) raw shrimp, shelled and deveined
salt and freshly groundblack pepper

Method:
1 Heat the oil in a frying pan over medium-low heat. Add the garlic and pepper flakes and cook gently, stirring, for about 1minute.

2 Add the sherry and shrimp, turn up the heat, and cook, stirring occasionally, for 5 minutes or until the juices have reduced by half. Season with salt and freshly ground pepper and serve with crusty bread and a crisp salad.
