Lightly whisk 2 eggs with a tiny drop of milk, and season with salt and pepper. Heat a small frying panuntil hot, and add 1 tablespoon butter.
Once the butter is melted and foaming, pour in the egg mixture, and pull the edges away from the side of the pan toward the center using a spatula; keep doing this so that any uncooked mixture runs to the edge.
After about 30 seconds, most of the egg should be set. It will still be soft and uncooked in the middle, but residual heat will continue cooking the omelet after you have taken it out of the pan.
Sprinkle a handful of grated cheese down the center of the omelet, then fold one half of the omelet over the top of the other. Slide onto a plate, and serve immediately.
