Mushrooms in garlic sauce

Serves 4

Ingredients:
4 tbsp olive oil
1lb (450g) mushrooms, halved
4 garlic cloves, finely sliced
2 fresh red chiles, seeded and finely sliced
4 tbsp dry sherry
1 chicken bouillon cube
freshly ground black pepper

Method:
1 Heat the oil in a large frying pan, add the mushrooms, garlic, and chiles, and cook for 2 minutes over low heat. Add the sherry, crumble in the bouillon cube, and season with pepper. Increase the heat to medium and cook for 10 minutes, stirring occasionally, or until the mushrooms have released their juices.

2 Cook for 3 minutes more, or until the juices have reduced by half. Serve warm, with crusty bread.
