Serves 8–10
Ingredients:
1 x 15½oz (439g) can chickpeas, drained and rinsed
2 garlic cloves, crushed
juice of 1 lemon, plus extra if needed
2–3 tbsp tahini
pinch of paprika
2–3 tbsp olive oil
sea salt
Method:
1 Combine the chickpeas, garlic, lemon juice, tahini, and paprika in a blender or food processor. Blend to a smooth purée.
2 With the motor running, gradually add the oil, a little at a time, until the hummus reaches a dipping consistency. Taste, and season with salt, adding some extra lemon juice if you like. Blend again.
