Serves 4
Ingredients:
½ cup fino sherry
1 cup water
½ cup granulated sugar
3 firm but ripe Bosc pears, peeled and quartered
5½oz (150g) thinly sliced Serrano or Parma ham, cut into pieces
hot chili oil or yogurt and mint, for serving
Method:
1 Combine the sherry, water, and sugar in a saucepan and bring to a boil. Add the pears, return to a boil, and simmer for 10–15 minutes, until they are just tender. Turn off the heat and allow to cool for 30 minutes.
