How to make Asian turkey and noodle soup recipe - Soupe de Turquie et de nouilles asiatique recette
Serves 4
Pour 3 cups hot vegetable stock into a large saucepan. Add a generous splash of soy sauce, 1 stalk lemon grass, peeled and finely chopped, a 1in (2.5cm) piece of fresh ginger, sliced, and 2 large skinless turkey breast fillets, about 7oz (200g) each.
Bring to a boil, reduce the heat slightly, and simmer for 15-20 minutes, depending on size, until the turkey is fully poached and cooked through. Remove from the pan using a slotted spoon, and shred when cool.
Add 10oz (300g) fine rice noodles and 1 seeded and sliced fresh red chile to the poaching liquid, and simmer for 5 minutes. If necessary, add boiling water to cover the noodles.
Return the shredded turkey to the pan with a handful of fresh cilantro leaves and heat through. Season with sea salt and freshly ground black pepper to taste. Serve immediately.
