How to make Garlic and Caper Marinated Chicken Thighs Recipe - This is a great chicken dish that is perfect for entertaining or when you just want to impress your family. Ingredients:
2 1⁄2 pounds chicken thighs
1⁄2 cup extra-virgin olive oil
10 cloves garlic
1 teaspoon fresh lemon juice
1⁄2 teaspoon dried thyme
1⁄2 teaspoon kosher salt
1⁄4 teaspoon freshly ground black pepper
1⁄4 cup capers, drained and rinsed
Method:
1. Place the chicken thighs into a large zip-top bag. Add the olive oil, garlic, lemon juice, thyme, salt, and pepper to a blender and blend until smooth. Pour the marinade over the chicken, then add the capers. Massage the chicken with the marinade to mix in the capers. Refrigerate for 4 to 6 hours or overnight.
2. Preheat the oven to 350°F and spray a large baking sheet with nonstick cooking spray.
3. Pour the entire bag of chicken and marinade into the prepared baking sheet, spacing the chicken evenly. Bake for 30 to 35 minutes, until the chicken is cooked through. Let cool for 5 minutes and serve.
