Ingredients:
1 pound farfalle pasta
2 tablespoons extra-virgin olive oil
1⁄2 cup finely diced white onion
1 tablespoon minced garlic
2 cups diced cooked chicken breast
1 15-ounce can black beans, drained and rinsed
1 cup fresh corn kernels
1⁄4 cup chopped fresh cilantro leaves
2 14-ounce cans fire-roasted diced tomatoes
1⁄2 cup heavy cream
1⁄4 teaspoon kosher salt
1⁄4 teaspoon freshly ground black pepper
1⁄4 teaspoon garlic salt
Method:
1. Cook the farfalle pasta according to the package directions, drain, run under cold water to stop the cooking, and set aside.
