Makes 2 tacos
Ingredients:
1 cup tomato, julienned
1 cup mozzarella, julienned
2 teaspoons olive oil
1½ teaspoons cumin
1½ teaspoons balsamic vinegar
Dash of fine ground sea salt
1-2 pieces lettuce per taco
Basil, torn, for topping
Tortillas
Method:
Mix all ingredients except lettuce, basil, and tortillas in a medium mixing bowl and allow to sit at least 2 minutes.
Meanwhile, heat a cast-iron skillet over medium-high heat. Heat a tortilla 1 extra minute on each side until slightly firm, then top with lettuce and tomato mixture. Finish with basil.
