I will be the first to admit I always have a good jar of pasta sauce on hand for busy weeknights, but it is so great to have a homemade sauce to serve over your favorite noodles. The buttery, cheesy wagon wheels magically take the kids' minds off all of the veggies inside the pasta sauce. Serve with a simple salad and Cheesy Garlic Toast.
Ingredients:
2 tablespoons extra-virgin olive oil
1 cup finely chopped white onion
1 cup chopped zucchini
1 cup chopped fresh spinach leaves
1⁄4 cup finely chopped mini sweet peppers
1 tablespoon minced garlic
1 28-ounce can crushed tomatoes
1⁄4 cup chopped fresh basil leaves
3⁄4 teaspoon kosher salt
1⁄2 teaspoon granulated sugar
1⁄4 teaspoon fresh cracked black pepper
1⁄4 teaspoon garlic salt
1⁄4 teaspoon Italian seasoning
1 pound wagon wheel pasta
4 tablespoons (1⁄2 stick) butter
1⁄2 teaspoon garlic salt
1⁄2 cup shredded Parmesan cheese
Method:
1. Heat the olive oil in a Dutch oven or large pot over medium heat. Add the onion, zucchini, spinach, and peppers and cook, stirring, until tender, 8 to 10 minutes. Add the garlic and cook, stirring, for 1 minute. Add the crushed tomatoes, basil, salt, sugar, pepper, garlic salt, and Italian seasoning and stir to combine. Reduce the heat to low and let simmer, about 10 minutes.
2. Cook the pasta according to the package directions. Drain and return to the pot. Add the butter, garlic salt, and Parmesan cheese and stir to combine. Serve with the pasta sauce.
