How to make Watermelon and Watercress Salad with Shallot Citrus Dressing Recipe

For the Dressing:
1 1/2 tablespoons Shallots, minced
1 teaspoon Dijon mustard
1/2 teaspoon Honey
2 tablespoons Apple cider vinegar
1 tablespoon Orange juice
1 tablespoon Lime juice
1/4 cup Extra-virgin olive oil
1/4 cup Vegetable oil
To taste Salt and black pepper
For the Salad:
1 1/2 tablespoons White sesame seeds
1/4 teaspoon Roasted sesame oil
2 cups Watermelon, seeded, 1-inch (2.5 cm) pieces
3 cups Watercress leaves, washed, dried
1/4 cup Flat-leaf parsley
1/2 cup Green onions, white and green parts, sliced
1/4 cup Chervil tops, fresh (fresh oregano may be substituted)
Method:
Combine all the dressing ingredients except the oils and salt and pepper in a blender. Blend until smooth and add the oils slowly to make an emulsion. Correct seasoning.
Toast the sesame seeds in sesame oil until lightly toasted, and let cool.
Combine half of the seeds with the watercress, parsley, green onions, and chervil. Toss with half of the dressing.
Toss the watermelon with the remaining dressing.
Divide the greens among cold plates and top with watermelon.
Sprinkle with remaining sesame seeds.
