How to make Sauteed Halibut with Warm Apple and Dried Cherry Compote Recipe

Ingredients:
1/3 cup Dried cherries
1/4 cup Apple brandy
1/4 cup Unsalted butter
2 cups Walla Walla onions, thinly sliced
1 1/2 cups Granny Smith apples, 1/2 inch (1.2 cm) dice
2 Garlic cloves, minced
1 tablespoon Lemon juice
1/2 teaspoon Salt and black pepper
Halibut fillets, boneless, skinless
1 Egg, beaten with a little water
As needed All-purpose flour, for dredging
2 tablespoons Hazelnut oil
Method:
Rehydrate the cherries in the brandy over a slow boil. Remove from the heat and set aside.
Heat the butter over medium heat and cook the onions until translucent, about 3 minutes.
Add the apples and garlic. Continue to cook and stir occasionally until the apples are soft and the onions are golden brown.
Stir the lemon juice into the cherries and brandy. Add the cherries to the apples; warm thoroughly and correct seasoning. Keep warm.
Season the fillets with salt and pepper. Dip fillets into beaten egg and then into flour.
Heat the oil over medium-high heat and sauté the fillets until golden brown on both sides, 3 minutes on one side, 2 minutes on the second side. (Turn only once, if necessary, finish in oven.)
Serve each halibut fillet topped with the warm compote.
