Carrot Latkes
Makes 10-12
Ingredients
2 c. grated carrots (6-8 carrots)
1 medium onion, grated
3 eggs
½ c. matzah meal
½ tsp. baking powder
Salt and pepper to taste
Oil for frying
Method:
Combine carrots and onion in large bowl. Add rest of ingredients and mix thoroughly.
Heat 1/8 inch of oil in large frying pan.
Carefully place spoonfuls of batter into hot oil and fry on both sides until brown.
Drain on paper towels.
