How to make Red Swiss Chard and Spinach Saute Recipe

Ingredients:
6 cups Spinach leaves, ribs removed, washed thoroughly
6 cups Red Swiss chard, ribs removed, washed thoroughly
2 tablespoons Olive oil
1/4 cup Onion, minced
1 tablespoon Garlic, minced
4 tablespoons Unsalted butter
to taste Salt and black pepper
Method:
Bring about 3 quarts (96 ounces) of salted water to a boil.
Blanch the chard for 2 minutes and the spinach for about 30 seconds (depending on how old the spinach is).
Drain and refresh in ice water; squeeze the leaves dry by hand.
Heat the oil over medium heat and cook the onion for 3 minutes. Add the garlic and cook 1 minute more.
Add the butter and let melt.
Add the spinach and chard. Cook until the liquid from the greens has evaporated and the chard is tender, 5 to 7 minutes.
Adjust seasoning.
