How to make Peanut Butter Wagon Wheels Recipe - The peanut is native to South America where it has been found in prehistoric graves at Ancan, Peru along with pottery decorated with peanut designs.
Makes 16 large cookies
Ingredients:
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup butter, softened
1 cup peanut butter
2 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
1 cup coarsely chopped peanuts
Peanut halves (optional)
Method:
Preheat oven to 375F (190C).
Lightly grease baking sheets. In a medium-sized bowl, combine flour, baking soda and baking powder. In a large bowl, beat butter, peanut butter and brown sugar until smooth and light.
Beat in eggs and vanilla until light and fluffy. Stir in flour mixture. Mix just until well blended, then stir in chopped peanuts.
Refrigerate dough 30 minutes. Form into balls using 1/4 cup dough for each. Place 3 balls on each greased baking sheet. Cookies spread during baking. Using a fork dipped in water, flatten to 4-1/2 inches across.
Decorate with peanut halves, if desired. Bake 10 to 12 minutes or until lightly browned. Cool 10 minutes on sheets; remove to racks to finish cooling.
