How to make Maine Cranberry Pudding Recipe - Cranberries required so much sweetening that they were not too popular in the early days when sugar was a luxury.
Makes 8 servings
Ingredients:
4 cups fresh whole cranberries, washed, dried
1-1/2 cups sugar
1/2 cup chopped walnuts
1/4 cup water
2 eggs
1 cup all-purpose flour
1/2 cup butter, melted
Vanilla ice cream
Method:
Preheat oven to 325F (165).
Grease a shallow 1-1/2-quart baking dish. Spread cranberries evenly over bottom of dish. Sprinkle with 1/2 cup sugar and nuts. Pour water around berries in dish. In a medium-sized bowl, beat eggs until foamy.
Add remaining 1 cup sugar, beating until light and fluffy. Fold in flour and melted butter. Spoon batter over berries. Bake 45 to 55 minutes or until pudding is golden. Serve warm with vanilla ice cream.
