How to make Johnnycake Recipe - the cornmeal bread that colonists first called journey cake, is one that seems to originate from a large area of the eastern part of our country.
Makes about 24 cakes
Ingredients:
1 cup stone-ground cornmeal
1 teaspoon sugar
1/4 teaspoon salt
1-1/4 cups boiling water
1 tablespoon butter, melted
Bacon drippings
Butter
Maple syrup
Method:
In a medium-sized bowl, combine cornmeal, sugar and salt. Add boiling water and melted butter; stir until smooth. Place a 10-inch skillet over medium-high heat. Brush
with bacon drippings.
Drop batter by tablespoonfuls onto hot skillet, making a few cakes at a time. Cook until crisp and browned on 1 side.
Turn and cook until underside is golden. Repeat with remaining batter, brushing skillet with more bacon drippings as required. Serve hot with butter and maple syrup.
