Orange and Herb stuffing
50g/2oz/4 tbsp butter
1 large onion, finely chopped
2 garlic cloves, crushed
75g/3oz/1½ cups fresh white breadcrumbs
50g/2oz/½ cup pinenuts (pignoli), chopped
6 ready-to-eat dried apricots, chopped
grated zest and juice of 1 orange
2 tbsp each chopped fresh thyme and sage
1 medium (US large) egg yolk, beaten
salt and ground black pepper
1 Heat the butter in a pan and fry the onion and garlic over a low heat for 7–10 minutes until soft but not brown.
2 Put the remaining ingredients in a large bowl. Add the onion mixture and stir to bind, adding more orange juice if needed.
3 Use to stuff a 4.5kg/10lb turkey.
