200g/7oz cooked, peeled beetroot
2 tsp chopped fresh root ginger
juice of 1 lemon
150ml/¼ pint/scant ⅔ cup pressed carrot juice
150ml/¼ pint/scant ⅔ cup pressed orange juice
1 Roughly chop the beetroot and put in a blender with the other ingredients. Blitz until smooth and pour into two glasses.
