berry and passion fruit salad

How to make berry and passion fruit salad recipe - Each serving provides 61 calories, 2 g protein, <1 g fat (0 g saturated fat), 11 g carbohydrate (11 g sugars), 6 g fiber, 7 mg sodium

SERVES: 6

PREPARATION: 15 MINUTES, COOKING: NONE

Ingredients:
3 cups (450 g) strawberries, halved
1 1/4 cups (155 g) raspberries
3/4 cup (100 g) blackberries
2/3 cup (100 g) blueberries
2/3 cup (100 g) mixed red currants and black currants, stalks removed
2 passion fruit
1 tablespoon (15 ml) superfine sugar
juice of 1/2 lemon or lime

Method:
1 Mix the strawberries, raspberries, blackberries, blueberries, red currants and black currants together in a bowl.

2 Cut each passion fruit in half and scoop the pulp and seeds into a sieve set over the bowl of berries. Using the back of a spoon, rub the pulp and seeds firmly to press all the juice through the sieve on the berries. Reserve a few of the seeds in the sieve and discard the rest.

3 Add the sugar and lemon juice to the berries. Gently toss together. Sprinkle the reserved passion fruit seeds over the top. Serve or cover and chill briefly.
