4 tbsp olive oil
1 small onion, finely chopped
3 red (bell) peppers, seeded and diced
2 red chillies, seeded and diced
2 tbsp balsamic vinegar
4 tbsp chopped fresh coriander (cilantro)
1 Heat the oil and cook the onion, peppers and chillies over a medium heat for 5 minutes, stirring until softened.
2 Add the balsamic and coriander and transfer to a bowl. Set aside to cool.
