1 onion, quartered and studded with 6 cloves
2 bay leaves
450ml/¾ pint/1¾ cups milk
125g/4oz/2 cups fresh white breadcrumbs
a good pinch of freshly grated nutmeg
50g/2oz/4 tbsp butter
200ml/7fl oz/¾ cup double (heavy) cream
salt and ground black pepper
1 Put the onion, bay leaves and milk in a pan. Heat very gently for 15 minutes.
2 Remove the onion and bay leaves. Stir in the breadcrumbs, nutmeg and butter. Add the cream and seasoning. Serve warm.
